Does Instagram show who viewed your profile?
No. Instagram has never offered this and does not collect it in a form any third party can read. Every 'who viewed your profile' app is inventing its output.
What those apps really do
They connect to your account, pull your follower list and recent interactions, and present a shuffled subset as 'visitors'. The names look plausible because they are people you already know.
Some go further and simply randomise, which is why the list changes when you reopen the app.

You granted a third party access to your account to receive fabricated data. Several of these apps have been removed for credential harvesting.
